Crispy almond cookie recipe
Many people asked me about the almond cookies I brought to our last meeting on May 21. I post the recipe here. If you have any questions, please feel free to ask me.
This recipe will make 12-15 peices (palm size).
Ingredients:
2 eggs white (egg size: large)
1/4 cup sugar
1/4 cup olive oil
1/4 cup cake flour
1 or 1 1/2 cups almond slice (use as desired)
**If you use extra large or jumbo eggs, change 1/4 cup to 1/3 cup.
Instructions:
1. Preheat the oven to 350 degrees.
2. Put all ingredients, except almond slices, in a bowl and use a spatula or big spoon to stir by hand very gently until the sugar is melted and all ingredients are mixed well. (Do not stir hard to make foams.)
3. Add almond slices and stir gently.
4. Scoop one tablespoon of mixed ingredients on the non-stick baking sheet and make it as thin as possible. Try not to let almond slices overlapped.
5. Bake 10 - 15 minutes (The exact time may vary by different ovens) or until the cookies turn brown.
6. When the almond cookies are taken out from the oven, they are still soft. The cookies will turn hard after totally cool. Serve after cool.

I missed those cookies I think, but they do sound good! If they're still soft when they come out, you could probably shape them into rolls or mini bowls to fill with strawberries.. Mmmm!
